<h4>Luisa&#8217;s 21<sup>st </sup>Birthday Party</h4>
<p>Whilst Craig was enjoying catering a 40<sup>th</sup> Birthday finger food function in Mont Albert, Ryan was run off his feet catering for 250 people at Luisa’s 21<sup>st</sup> birthday.  The birthday girl and her family were a pleasure to work with throughout the entire process.  The guests enjoyed Cube Catering’s ‘Party Time’ finger food as they mingled, danced and drank the tasty beverages that Cube Catering served from the bar.  Cube was grateful to receive an email from Luisa thanking Cube Catering for going over and beyond their service needs providing top quality finger food and staff enabling the night to run smoothly for the guests to focus on the important things, eating, drinking, dancing and socialising!</p>

<p>Scot’s Church welcomed the Korean Choir with a cocktail party inviting Cube Catering to provide the guests with their gourmet finger food menu.  As tasty as Cube’s finger food is, the highlight of the day was the incredible Korean Choir as they sang an intimate performance at the church prior to their tour of Melbourne.  As Cube Catering’s waiters handed around our gourmet finger food, the Korean Choir filled the venue with breathtaking song.  The guests departed uplifted by the voices of the choir and satisfied from Cube Caterings selection of gourmet finger food.</p>

<p>Our friends from Blackburn contacted us for Rae’s 70th Birthday party.  Anne and Rae gave us licence to write a menu for a gourmet sit down dinner for 20 consisting of family and friends.  Using Ryan’s recent experiences working alongside world renowned chef Pierre Khodja<strong>, </strong>we developed a delicious 5 course sit down exclusive menu that all guests thoroughly enjoyed.  From the seasonal fresh seafood including salt and pepper calamari followed by the juicy whole barramundi, the meal would not have been complete without Cube Catering’s famous crème brulee for dessert. Cube Caterings exclusive sit down menu was a winner.</p>

<p>A stunning vintage house in Toorak was the perfect location for Julia and James’ engagement party. Julia and James selected Cube Caterings gourmet finger food for the evenings menu whilst their guests mingled throughout the house and garden to celebrate.  Once again Cube’s tasty cheeseburgers and divine Thai Beef Salad Rice Paper Rolls were the most popular items on the menu.  The happy couple sang their praises of cube caterings finger food, staff and service as they had a fantastic, relaxed and easy evening where they did not have to lift a finger.</p>

<h4><span style="text-decoration: underline;">Sunday Afternoon Spit Roast Catering Birthday Party</span></h4>
<p>In the South Eastern Suburbs of Melbourne, a Sunday afternoon birthday party in Cheltenham was our next call of service requesting our spit roast catering.  Thankfully the weather stayed clear as the party of 65 enjoyed the choices of cube caterings juicy marinated lamb and chicken cooked on a traditional charcoal spit.  With the smells of the spit and the faint smoke wafting from the backyard, the spit itself generates a fantastic atmosphere for backyard events.  With the warmer months ahead, cube catering’s spit roast menu is assured to be a popular option.</p>

<p>Deana contacted Cube Catering after hearing about us from another satisfied customer. Cube’s delectable finger food was Deana’s choice for her guests as they chose to either stand or sit whilst mingling throughout the event.  Cube catering served sumptuous Smoked Salmon bread baskets, some tasty mini pizza’s and homemade gourmet pies just to mention a few of the finger food options. <h4><span style="text-decoration: underline;">Dominance Guardian Services  Spit.</span></h4>
<p>Cube caterings famous spit roast catering was again the choice at Nick’s staff party in Moorabbin and what a hit Cube’s spit roast catering was once again!  The guests worked up an appetite playing paintball before they the wafts of spit could no longer be ignored.  The party indulged in Cube caterings version of souvlakis with many going back for seconds and even thirds.  Although many of the boys had a very large appetite the great thing about spit roasts is that there is always more than enough marinated meat to go around.</p>

<h4><span style="text-decoration: underline;">Oaks Day Celebrations</span></h4>
<p>What does the excitement and glamour of Melbourne’s Spring Carnival mean to Cube Catering? Gourmet finger food accompanied by champagne and Corona’s of course! Melbourne’s spring carnival is a wonderful opportunity to entertain guests, have a punt or simply mingling with your friends with quality food and drink in the spring sunshine. This year Oak’s day kicked it off the carnival with a gourmet finger food function.  Everyone could not help but join in the party atmosphere! As people mingled and put on a few bets the champagne was flowing and Cube catering’s Tandoori Chicken and Mini Cheeseburgers were the perfect accompaniments! Envious eyes from parties nearby watched cube fire up the BBQ whilst the guests excitedly watched the horses enjoying each other’s company.  The champagne was flowing all day and when the sun went down and the wallets were full (for some anyway) the guests wandered home not needing to worry about the clean-up.</p>

<p>With 2 finger food functions booked for one very warm and sunny stakes day we were set for a busy one! With the first day of warm weather to hit Melbourne the drinks were of high demand yet nothing that Cube Catering could not handle. Cube catering fired up the BBQ letting the smells of the gourmet cooking waft across the fields of people.  Malaysian Beef, Mini Cheeseburgers, Thai Chicken Burgers and Tandoori Chicken were some of the favourites amongst cube’s menu of finger food items that were enjoyed that day. As the day came to an end and tired bodies made their way home Cube stayed focused in order to get to the engagement party they were asked to cater for that evening.  And they did it all in a day’s work!</p>

<p>Our famous <a title="Gourmet spit roast catering" href="/">gourmet spit roast catering</a> was again the choice for Julia&#8217;s 21st birthday party in Mt Eliza.  The property was amazing as there was no shortage of room to set up our Gourmet Spit outside right next to the pool. Sharon and Peter (Julia’s Parents) really seemed to appreciate the selection of salads, whereas the youngsters seemed to prefer the wrap option.  There was a fun and enjoyable atmosphere as the DJ worked hard till all hours in the morning and Cube Catering providing their Gourmet Spit catering to satisfy everyones hunger.</p>
<h3>Celebrating Anne’s  93rd  in style with Cube Caterings finger food menu.</h3>
<p>Our favourite clients were next cab off the rank.  It was Anne Robinson’s  93rd birthday and as it happened for her 90th and her 92nd, Rae threw a finger food party for her at her beautiful house in Blackburn.  The usual suspects were there enjoying the gourmet finger food on offer and they all had a great time as they do every time.  Rae surely knows how to throw a birthday party for her friend.  Can’t wait for the next party Rae and Anne&#8230;&#8230;.</p>
<h3>Cube Catering welcomes Ryder John Tesoriero</h3>
<p>I almost forgot to mention our most exciting news of February.  On Wednesday 23rd February, Cube Catering welcomed the newest member of their team.  Ryder John Tesoriero came into the world at 3:54pm weighing in at 2.5kg.  Mother and son are both doing fantastic and father can’t wait for him to strap on an apron and be part of the wedding catering scene&#8230;&#8230;.</p>

<p>The end of February did not mean the end of our busy season and March started with a bang.  We started off with 2 finger food weddings and a gourmet spit birthday/christening on the same day.  Before Ryan made the long trek down to Lorne to cater for one of the finger food weddings, he made sure things were running smoothly at the birthday/christening being held in Chadstone.  The gathering enjoyed our famous <a title="Gourmet spit roast catering" href="/">gourmet spit roast catering</a> and had a lot of fun with Kosta who added a Greek flavour to our traditional spit roast.</p>

<h3>High Tea Wedding Catering.</h3>
<p>While Ryan was on his way down to Lorne, Craig was enjoying a cocktail party in Parkdale.  The happy couple enjoyed a beautiful wedding ceremony in the picturesque Botanical Gardens before venturing back to a friend’s place for the finger food reception.  We had actually catered for the friend’s son’s engagement party a couple of years before so we already knew our way around the house.  The Bride had requested a ‘High Tea’ finger food style menu and Cube Catering obliged with sandwiches and scones topped with  jam and cream to name a couple of the items.  The guests enjoyed a cup of Primo Caffe,  Italian styled espresso Thanks to Andrew from Peninsula Coffee for your services.</p>
<h3>Cocktail Party Catering Melbourne</h3>
<p>An Engagement party in Chelsea was one of our last finger food functions of our busy period and it didn’t disappoint.  The host of the party wanted to make sure that his guests remembered his engagement party for a long time to come.  He spared no expense and as long as his guests were full of good cocktail party food and alcohol, he was a happy man.  He was a proud man as he showed off his newly renovated house to anyone who would listen.  Even though he had purchased enough beer to sink the Titanic, reinforcements were required before the night was done.  And what a late night it was&#8230;&#8230;.</p>
<h3>Cube Catering is fast becoming Flinders  no 1 Party Caterers.</h3>
<p>On the same night,  some boys were having just as much fun (though not as rowdy) down at Flinders Bowls club.  Some elder gentlemen had obtained their yearly leave pass and were partaking in their annual golf weekend.  Part of their festivities include an evening of good food and wine at Flinders Bowls club.  Freshly shucked Oysters and our famous spit catering were on the menu and a good time was enjoyed by all.  Cube Catering is fast becoming Flinders number 1 <a title="Gourmet catering company" href="/">gourmet catering company</a>.</p>
<h3>Birthday Party Catering Melbourne.</h3>
<p>Birthday parties do not have be the same, year in year out, at Cube Catering, we are experienced at providing a unique experience and a memorable birthday party so that you and your guests can relax and and enjoy the day. We have had another busy couple of weeks with  a 40th birthday in Edithvale (a finger food style party), a 70th birthday in Elwood (2 course sit down), a wedding in Dingley (finger food), a 30th birthday in Cheltenham (finger food) and a 21st birthday in Templestowe (finger food).  The last 3 being on the same day.  The gourmet 2 course sit down menu in Elwood saw us catering for our second event at Elwood Sailing Club.  The club has a beautiful view of the bay from the second storey and is a very popular spot especially in the warmer months.  Unfortunately the weather wasn’t great that day which meant that the guests could not realise the full potential of the location.   That aside, all guests enjoyed their 2 course sit down menu and we hope to do many more functions at Elwood Sailing Club.</p>
<h3>Wedding Catering Melbourne</h3>
<p>Even though those 3 functions were on the same day, with the wedding being a lunchtime finger food function and the other 2 at night, we were able to spread ourselves over all 3 parties.  Whilst the couple were getting married at the ever popular Botanical Gardens, we were getting their tasty finger food ready at their lovely house in Dingley.  We had to be ready to serve the finger food as soon as everyone returned from the ceremony.  Not only was this to make sure the guests were fed on time, we also were on a time schedule to make sure we made it to our other functions.  The guests arrived on time and everyone enjoyed the variety of our finger food catering.  Everything went to plan and we both arrived at our second functions in time.</p>
<h3>Gourmet Finger Food Catering</h3>
<p>The 21st in Templestowe was held in the family home, and what a beautiful home it was.  The father of the birthday girl runs a prominent lolly shop and you could tell that he loved to throw a party and show off his house.  As being with a 21st birthday, some of the guests aren’t as focused on the <a title="Finger food catering" href="/">finger food</a> as they are on other things.  As usual, we supplied enough finger food to fill everyone up, and the father took it upon himself to make sure that the finger food did not go to waste.  It was a fun evening and not just for the guests.  We hope to work with that family again in the future.  The 30th birthday in Cheltenham was a little more tame than the 21st, which is  to be expected.  The guests enjoyed our fabulous finger food and all had a great time.</p>

<p>The Victorian Game Fishing Association held their annual awards dinner at their headquarters in Edithvale and we used our previous experiences to organise a 3 course sit down dinner  from a makeshift kitchen.  As we were using the front outside area with no walls, we were open to the elements.  Luckily for us, the weather was kind to us that night and the tarps erected by the organisers provided ample shelter.  Cube Catering’s 3 course sit down catering was a hit and it ended up being a great night and everyone went home with full stomach’s.  Congratulations to all those who went home with a bagful of awards.</p>
<h3>Middle Eastern themed finger food Prahran</h3>
<p>The backdrop for our next <a title="Gourmet catering" href="/">gourmet catering function</a> was beautiful Prahran.  The 4 storey townhouse provided some exercise before and during the night with the kitchen being on level 4 and the party on level 3.  As I hadn’t not done my exercise for the day, I welcomed the challenge.  The house was amazing but the standout was the unbelievable view of the city lights.  Everyone enjoyed themselves as they feasted on our finger food which was tailored to our customers needs and the place was still jumping when we left around midnight.</p>

			<content:encoded><![CDATA[<p>As we approached the end of the year, we had a number of Christmas parties to cater for.  One of which was for a large construction company in Seaford.  We fed 175 hungry workers with our increasingly popular lamb and chicken on the charcoal spit.</p>
<p>The last day of 2010 saw us cater a wedding in Glen Waverley and a NYE Party in Brighton.  It was a warm balmy night, and the boys behind the bar were kept very busy.  The food was a big hit and it was a fantastic night to bring in the New Year.  Congratulations Tim and Jackie.  The NYE party in Brighton ended up being quite the treat for our staff as it’s not everyday we cater with the luxuries of walk in cool rooms &amp; large fragrant herb gardens to select our garnish from.  We would be delighted to be invited back to the Hogan’s as they were a delight to celebrate the New Year with.</p>
<p>After a couple of weeks off to recharge the batteries, we catered the Flinders Hotel belated staff Christmas party. This year they held it at the Flinders Yacht club right on the water.  We were fortunate enough to put on a display for the newly appointed and renowned head chef Pierre Khodja.</p>
<p>February brings one of our busiest periods and to kick it off, we had a <a title="Gourmet finger food" href="/">gourmet finger food</a> wedding for a family who are no longer strangers, having catered for them many times before. The marquee was placed overlooking Western Port Bay – the perfect location for any great party. On the same night we had an all-vegetarian style sit down wedding at The Mountain Goat Brewery in Richmond.  The couple were married at the Royal Botanic Gardens in St Kilda, followed by drinks and finger food on the Yarra, before everyone resided to the brewery.  After a busy afternoon setting up the brewery the place looked amazing, great job Kate and Sam!  After a few raised eyebrows by some of the guests to the lack of meat on their plates, the food was very well received and thoroughly enjoyed. Congratulations Zane and Lou.</p>
<p>The second weekend of February saw us catering Christine and Andrew’s beautiful outdoor wedding.  A huge marquee filled with tables and chairs for 160 guests was carefully positioned within the immaculate gardens and positioned next to a number of olive trees.  The groom’s father is very proud of his olives trees, so much so that we used his olives in the antipasto platters and Greek salads! The celebrations continued well into the night complimented by a lengthy stint of midnight fireworks, which saw the guests dancing to Zorba until early hours of the morning.</p>

			<content:encoded><![CDATA[<p>The festive season is nearly upon us and we kicked off a bumper December with a <a title="Spit roast function" href="/">spit roast function</a> down at Flinders.  Some nasty weather and a power shortage were unable to dampen the spirits  of the guests as they were in fine festive moods.  Flinders is a beautiful location and we look forward to heading back at the end of December for another function.</p>
<p>The rest of December is going to be a busy one with a couple of Christmas parties, a double birthday celebration, a NYE party as well as a NYE wedding.  We will keep you all posted as they happen, but in the meantime have a very Merry Christmas and a Happy New Year from the Cube Catering team</p>

			<content:encoded><![CDATA[<p>We had a traditional start to November with a spring racing Oak’s Day function.  Everyone was dressed for the occasion and had an incredible day despite any betting losses.  It was a long but very lucky day as it was the only day of the carnival it didn’t rain!  Ryan broke the record of 8 mini magnums on the drive home.</p>
<p>November also saw the start of the work Christmas parties.  We catered a building company’s Christmas party at the home of the Australian film ‘Crackerjack’ - Carrum bowls club.  Enticing finger food, cold drinks, and barefoot bowls in summer &#8211; could you ask for anything more?</p>
<p>November finished up with one of many functions we have done for Scots’ Church, and this particular occasion was to welcome a priest visiting from Scotland.  We put on an assortment of finger food items at their premises in the heart of the CBD.  The people and their facilities are a pleasure to work for and only make  us look forward to the next one!</p>

			<content:encoded><![CDATA[<p>What was supposed to be a relaxing holiday turned into an educational culinary experience. We fell in love with the Indonesian cuisine, so decided to explore their cooking culture first hand and booked ourselves into a 3-day Balinese cooking course.  It was unbelievable, the market encounter and food was fantastic! We have added a recipe below of one of our favourite Balinese dishes by Nusa Dua’s very own Iron Chef. Hope you enjoy it as much as we did.  Congratulations to Warrick &amp; Lucy on tying the knot and thanks for an awesome time.</p>
<p>From Indonesia to the Mediterranean – Upon our return from Bali we catered a retirement party for a steel company employee.  We did our popular marinated chicken and lamb on a charcoal spit. All the boys loved it and boy could they eat!!</p>
<p><span style="text-decoration: underline;">Grilled fish in banana leaves (Pepes Ikan)</span> &#8211; serves 4-8</p>
<p>600gms fish</p>
<p>4 shredded lime leaves</p>
<p>Banana leaves</p>
<p><strong> </strong></p>
<p><strong>Spices:</strong></p>
<p>6 cloves of garlic</p>
<p>2 tomatoes</p>
<p>3 almonds or macadamias</p>
<p>¼ tsp shrimp paste</p>
<p>1 tsp tamarind</p>
<p>2-4 small red chillis</p>
<p>1 tsp fresh turmeric</p>
<p>1tsp palm sugar</p>
<p>3 tbs oil</p>
<p>3 shallots</p>
<p>1tsp sea salt</p>
<p>2 stalks of lemon grass</p>
<p>½ tsp black pepper</p>
<p>3 large red chilli</p>
<p>1½ tbs fresh galanal (available from asian grocers)</p>
<p>2 tsp ginger</p>
<p>1 tsp coriander seeds</p>
<p>Grind the spices with the oil in a mortar and pestle or blend with a food processor until you have a fragrant, golden yellow paste, flecked with chilli and tomato skin. Chop the fish into fat chunks, roughly 4cm x4cm, or leave whole if you prefer.  Shred the lime leaves. Mix thoroughly with the spice paste, oil and fish. Cut the banana leaves into rectangles roughly the size of a standard envelope. Wrap the fish in one or two layers of the banana leaves.  Roll over and secure ends with a toothpick or tie with string. Grill, steam or barbeque the fish for five minutes or until cooked.</p>
<p>Serve with steamed rice and enjoy.</p>

			<content:encoded><![CDATA[<p>The chef has kindly donated a recipe for his favourite chicken and leek pies – check it out! You have to try them at home, they are delicious! These are perfect for a winter family dinner at home, we are thinking of making some rustic mini versions and adding them to our canapé menu.  Try them and let us know what you think.  Just a little tip, try an oaked chardonnay with these pies, a match made in heaven!</p>
<p><strong>Chicken, leek &amp; potato pies</strong><br />
<strong>Serves 4</strong></p>
<p>45g butter<br />
1 tbsp olive oil<br />
1medium onion – peeled and chopped<br />
1clove garlic – peeled and finely chopped<br />
6 leeks – trimmed and finely sliced<br />
1 tsp dried oregano<br />
4 tbsp chopped parsley<br />
450g boiled potatoes – peeled and diced<br />
200ml milk<br />
300ml thick cream</p>
<p><strong>For pie:<br />
</strong>Puff pastry sheets</p>
<p><strong>Egg wash:</strong><br />
1 beaten egg mixed with a little milk<br />
1 spring onion – sliced lengthways into 4 pieces</p>
<p><strong>To serve:<br />
</strong>mixed leaf salad</p>
<p><strong>Chicken</strong><br />
1 x 1.5kg corn-fed chicken<br />
1small onion – peeled and chopped<br />
2 fresh bay leaves<br />
4 sprigs fresh thyme<br />
1 sprig flat-leaf parsley</p>
<p><strong>For drizzling:<br />
</strong>extra-virgin olive oil</p>
<p><strong>Instructions</strong></p>
<p><strong></strong>1. To roast the chicken, stuff the cavity of the bird with the onion and herbs, then season with sea salt and freshly ground black pepper. Drizzle the chicken with a little olive oil and roast in a preheated oven at 190C for 1¼ hours. Set aside until cool, then remove all the meat from the chicken, discarding the bones and skin. Shred the meat and set aside.</p>
<p>2. To make the filling, heat the butter and oil in a large saucepan over medium heat, add the onion, garlic and leeks and cook for 5 minutes or until softened. Add the oregano and parsley, then season with sea salt and freshly ground black pepper and cook for a further 5 minutes. Add the reserved chicken, potatoes, milk and cream, stir well and simmer for 15 minutes. Remove from the heat and set aside to cool.</p>
<p>3. To cook the pies, roll out half the pastry to ½cm thickness on a lightly floured surface and cut pastry into four 13cm circles to fit 12cm-diameter pie dishes. Carefully press pastry into each lightly oiled pie dish and trim off excess pastry around top of pie dish. Brush top edge of pastry with water, then cover with a thin strip of extra pastry to make a raised edge. Spoon 2-3 heaped tablespoons of the filling into each pie base. Roll out remaining pastry to ½cm thickness and cut pastry into four 12cm circles. Moisten the pie pastry rims with water and cover with the remaining pastry rounds, pressing the edges together with your fingers, then trim the edges. Place a spring onion slice on top of each pie. Brush with the remaining egg wash and bake in a preheated oven at 190C for 20-30 minutes or until the pastry is golden brown.</p>
<p>4. Serve hot with a simple mixed leaf salad.</p>
